Spring rolls are a favorite in many Vietnamese, Thai and Chinese restaurants. They are best dipped in sweet and sour sauce. You can also enjoy spring rolls at home. With a minimum of effort and at any time at any meal or occasion. Learn how to fold them properly and then the rest is a piece of cake. If you want to know how to fold a spring roll, start with step 1.


Method 1 of 2: The burrito method

Step 1. Lay the dough sheet flat

If you use a round sheet of dough, it doesn't matter how you lay it down. If the sheet is square, lay it with a straight side towards you.

Step 2. Make an egg mix

Break a raw egg into a small bowl and beat with a fork until completely mixed. With this you make the 'glue' with which you seal the spring roll. Once the spring roll is heated, it is safe to eat. If you make spring rolls that are not heated, do not use the egg mixture.

Step 3. Dip a baking brush in the beaten egg and brush the top and bottom edges with it

This will help the dough stick better later on.

Step 4. Place the filling on the dough sheets

Place it on the bottom half of the dough sheet and spread it in a line. This "line" should be about 1.5 to 2 cm wide. Make sure you don't put the filling over or too close to the edge of the dough. Leave enough room on each side to easily fold the pastry sheet around the filling without the filling falling out.

Step 5. Fold the left and right sides of the pastry sheet over the filling until the sides just touch

Some people find it easier to fold the top and bottom first and then fold the sides over them before rolling

Step 6. Fold the bottom over the filling

Then carefully fold the dough at the front (the side farthest from you) a little under the filling.

Step 7. Continue folding

If the filling is no longer visible because it is under the dough, hold the sides firmly in place as you continue to fold. Hold the roll firmly with your hands.

Step 8. Once the dough is well wrapped around the filling, you can continue rolling

Your spring roll is now ready to be baked!

Step 9. If the last piece doesn't stay in place, spread some more egg on it and stick it to the rest of the roll

Step 10. Continue rolling until you have all the spring rolls ready

You can make as many as you want, or just one for yourself.

Step 11. Deep fry them until golden brown

About 2-3 minutes on each side and you're done. Put some oil in a pan and fry the spring rolls over medium heat. Give them a minute to cool down and they are ready to eat.

Method 2 of 2: The envelope method

Step 1. Place the dough with a point towards you on a plate

If you are using rice dough, which is traditionally used in many types of spring rolls, read the instructions on the package first. You may have to put the dough sheets in hot water for 15 seconds before you can start. Place the sheet of dough with one point towards you so that it looks like a diamond and not a square.

Keep in mind that you can't use a raw egg to fix the dough with this method, the dough is already cooked. If you don't cook something anymore, don't use raw eggs to avoid food poisoning

Step 2. Place the filling horizontally just below the center of the dough

Now divide the filling in a line from left to right, leaving at least one inch on the left and right. This ensures that nothing will fall out of the spring roll and that you can fold the dough generously around the filling.

Step 3. Fold the bottom tip over the filling

The bottom tip now points in the same direction as the top tip. Fold so that the bottom point is about 2.5 cm above the filling and about 5 - 7.5 cm below the top point.

Step 4. You can optionally fold the bottom point in or under the filling

Some people find it more comfortable to let the tip of the dough blend into the filling. Others roll this first point all the way around the filling to hold it in place. Choose what you like best.

Step 5. Fold the left tip to the center of the spring roll

Now it is slowly starting to look like an envelope.

Step 6. Fold the right tip to the center, against the left

The envelope is almost ready. At this point, it should look like a stuffed envelope with the top flap still up.

Step 7. Roll up the spring roll from the bottom until you are done making your spring roll

All you have to do now is sit back and enjoy your delicious treat.
